Caramel Walnut Bread Pudding

Ingredients

  • 1 doz. petite cinnamon roll dough

  • 2 1/2 c. milk

  • 3/4 c. light brown sugar

  • 1 doz. eggs

  • 1 1/2 tsp. vanilla extract

  • 1/4 c. walnut pieces

  • 1 c. caramel topping

Instructions

  1. Pan cinnamon rolls 2 days ahead. Refrigerate.

  2. Raise and bake cinnamon rolls 1 day ahead.

  3. On the next day, cut cinnamon rolls into 1” cubes.

  4. Combine milk, brown sugar, eggs, and vanilla. Whisk together until well-blended.

  5. Pour mixture evenly over cinnamon rolls. Let stand 15 minutes; mix well.

  6. Sprinkle walnuts evenly over roll mixture. Drizzle with caramel topping.

  7. Bake 45 - 50 minutes at 350˚F or until pudding is puffed and knife inserted in center comes out clean. Cool 10 minutes.

  8. If desired, microwave additional caramel topping. Spoon pudding into dessert dishes, and serve warm with topping.

  9. If not served immediately, this dessert needs to be refrigerated.
